One of my favorite fall treats is pumpkin cupcakes! I have been baking these delicious little guys for many years each time Thanksgiving floats around. They are so, so SO good!
Each one has the pumpkin flavor as well as a hint of Christmas with the cloves, making these perfect treat for this time of year. Each bite you take is packed full of flavor paired with the sweet cream cheese frosting. If you are looking for a yummy and easy to put together treat for the holidays, this is it! You most definitely have to try these out!
I just baked these up, brought them to school and suddenly had 50 more best friends! 😉 Seriously though, everyone will be chasing after you wanting one or even another! They are just that good!
The texture is also amazing! This is one of my favorite parts about baking with vegetables, they make everything so moist! They are super light and fluffy while still being rich and decant which can be a hard medium to find.
I can tell you enough how amazing these are! You might just have to try them out yourself 😉
- 3 Cups Flour
- 2 Teaspoons Baking Soda
- 2 Teaspoons Baking Powder
- 2 Teaspoon Cinnamon
- 1/2 Teaspoon Ginger
- 1/2 Teaspoon Cloves
- 1 Teaspoon Salt
- 1 Cup Softened Butter
- 2 Cups Granulated Sugar
- 2 Eggs
- 1/2 Cup Applesauce
- 2 Teaspoons Vanilla
- 1 & 1/2 Cup Pumpkin Puree
Cream Cheese Frosting
- 8 oz Cream Cheese One Package
- 4 Tablespoons Butter
- 3 Cups Powdered Sugar
- 1 Teaspoon Vanilla
Preheat the oven to 350 degrees Fahrenheit
Beat the cream and butter together and then add in the eggs
Add in the rest of the wet ingredients to the mix
Mix together your dry mix in a separate bowl
Add your dry mix into the wet mixture
Now line your pan with cupcake winners, fill quite full and bake for18-20 minutes
Beat the butter and cream cheese together
Then add in your vanilla
Lastly, slowly add the powdered sugar till the consistency of frosting, keep tasting to make sure its not too sweet
